Recipe: Gi-antipasto Salad
Ingredients:
For the Salad:
- 2 heads of romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 can artichoke hearts
- 1 can sliced black olives
- 1 jar roasted red peppers
- 1/4 pound provolone cheese, cubed
- 1/4 pound fresh mozzarella, cubed
For the Toppings:
- 12 slices Genoa salami
- 12 slices pepperoni
- 12 slices provolone cheese
- 12 slices mozzarella cheese
For the Gi-antipasto Dressing:
- 1/2 cup extra-virgin olive oil
- Juice of 1 lemon
- 1 tbsp Italian seasoning
- Salt and pepper to taste
Optional Garnishes:
- Freshly grated Parmesan cheese
- Crushed red pepper flakes
Instructions:
- Toss the salad ingredients together: In a large bowl add chopped romaine, red peppers, olives, artichoke hearts, squared mozzerella and provolone, and sliced tomatoes.
- To make the lemon olive oil dressing: In a small bowl whisk the olive oil, lemon juice, and Italian seasoning. Pour over the salad and toss until well-mixed.
- Roll the salad topping meats and cheeses together: Take the salami two pieces at a time to serve as a base for the meat and cheese rollups, add in the slices of pepperoni, mozzerella, and provolone, two at a time for a layered look, then roll them up. In a normal antipasto salad, you would cut these rolls to make a number of circular layered cuts, but as this is a gi-antipasto salad, leave the giant rolls on top.
- Top the Salad: Arrange the rolled up meats and cheeses on top of each salad bowl in a circle in the middle.
