Recipe: Leprecorned Beef and Cabbage

Ingredients:

  • 3 lbs corned beef brisket
  • 1 head of cabbage, cut into wedges
  • 8 cloves of garlic, minced
  • 1 onion, sliced
  • 4 carrots, peeled and chopped
  • 4 potatoes, peeled and quartered
  • 1 tablespoon whole peppercorns
  • 1 tablespoon mustard seeds
  • 1 tablespoon coriander seeds
  • 1 tablespoon whole allspice
  • 4 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • Salt, to taste
  • Fresh parsley, for garnish

Instructions:

  1. Rinse the corned beef brisket under cold water and place it in a large pot or Dutch oven.
  2. Add enough water to cover the brisket by at least 2 inches.
  3. Add the minced garlic, sliced onion, chopped carrots, quartered potatoes, peppercorns, mustard seeds, coriander seeds, allspice, bay leaves, thyme, rosemary, and parsley to the pot.
  4. Bring the water to a boil over medium-high heat, then reduce the heat to low and cover the pot.
  5. Simmer the brisket for 3-4 hours, or until it is tender and easily pierced with a fork.
  6. Once the brisket is cooked, remove it from the pot and set it aside to rest.
  7. Add the cabbage wedges to the pot and cook them in the flavorful broth until they are tender, about 15-20 minutes.
  8. Slice the corned beef against the grain and serve it alongside the cooked cabbage, carrots, and potatoes.
  9. Garnish with fresh parsley and season with salt, if desired.
